A WORD FROM THE CHEF
If you’re looking for a tasty fakeaway that’s not too tough on the waist, these delicious burgers will hit the mark! This dish takes 35 minutes to prepare and 14 minutes to chill.
(For 4 people)
A bunch of spring onions, thinly sliced
400g lean ground beef (5% fat or less)
2 tsp chopped fresh parsley
2 tablespoons chopped fresh chives
Four slices of back bacon, with no visible fat
Green salad leaves
4 wholemeal rolls of 60g
For the taste
Low calorie cooking spray
One onion, coarsely chopped
1 tsp sweet chilli powder
Three tablespoon level sweetener
4 tablespoons balsamic vinegar
1 tablespoon Worcestershire sauce
½ teaspoon mustard powder
Place the spring onions in a bowl with the beef, parsley, chives and seasoning. Mix with your hands and shape four burgers about 10 cm in diameter. Cover and refrigerate 30 minutes.
While the burgers are cooling, prepare the relish: spray a nonstick pan with low-calorie cooking spray and place over high heat.
Sauté the onion and chili powder for five minutes until softened. Stir in the rest of the ingredients, bring to a boil and simmer for 10 minutes until thickened. Check seasoning before serving hot or cold.
Place the burgers under a medium/hot broiler for six to seven minutes on each side, or until cooked through. Add the bacon for the last five minutes of cooking, to cook it well.
Spread lettuce leaves, a slice of bacon, a burger and a little relish in each roll and serve immediately.
